Carrot Cake Cupcakes
If you didn’t know, carrot cake is my favorite cake flavor. It is the perfect cake flavor for Spring and Easter. This year, for Easter Brunch, I decided to bring carrot cake cupcakes with cream cheese frosting. I found a recipe on Pinterest that was not gluten- and dairy-free. So, I decided to modify the recipe to be gluten and dairy-free. I even created another no-bake vegan carrot cake bar with the leftover carrots. These cupcakes turned out to be really good and a healthier option.

Ingredients
1 1/4 cup almond flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon apple pie spice
2 cups shredded carrots
3/4 cup granulated sugar
1/4 cup packed light brown sugar
2 large eggs, room temperature
1 teaspoon pure vanilla extract
2/3 cup vegetable oil
Cream Cheese Frosting
1 cup vegan cream cheese
1/4 cup or half stick of unsalted butter, softened
1 cup powdered sugar
1/2 teaspoon pure vanilla extract
Walnuts
Instructions
Preheat oven to 350 degrees F. Line a standard muffin tin with paper liners and set aside. You may have some batter left over for about 3 more cupcakes.
In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In another medium bowl, beat together granulated sugar, brown sugar, and vegetable oil with stand mixer or hand mixer until well combined. Add eggs and vanilla into the wet mixture until well combined.
Slowly add the dry mixture to the wet mixture. Shred carrots in the food processor. Hand fold in carrots into mixture.
Fill prepared cupcake liners with about 2 scoops of batter.
Bake cupcakes at 350 degrees F for 20-22 minutes, or until a toothpick inserted in the middle of the cupcake comes out clean. Let cupcakes cool completely before adding frosting.
In another bowl, beat together vegan cream cheese and softened butter. Add vanilla and slowly add the powdered sugar.
Transfer the frosting to a gallon bag and cut one bottom corner for piping. Pipe frosting onto cupcakes, and optionally, add walnuts and more cinnamon.
Serve cupcakes at room temperature. Store cupcakes in the refrigerator.

The same Mary that anointed Jesus with oil went to see his tomb. She was able to see the angel roll the stone away and the empty tomb. That is so amazing! They were instructed not once but twice to tell the good news that Jesus is alive and not to fear. I could not imagine how breathtaking it would be to see the gospel unfold before your eyes, then Jesus, come up and say hi. Jesus is resurrected, and the first thing he says is hi. Sometimes, he can be funny.
Jesus did the most revolutionary thing the world has ever seen. He lived a perfect life. He showed us how to love the least of these. He healed us from sickness and disease. He freed us from our bondage. He forgave our sins. He washed our feet. He died for our sins once and for all and was resurrected from the dead. I am forever grateful for his life, death, and resurrection and what it has done for my life. I know sharing your faith with others can be scary, but do not fear, for we will see him again. If you don’t know Jesus, he says hi. If you do, do not fear; go and tell of what he has done.
